2 Star Winners in 2017 and 2019

We have always known our poultry is as good as it is possible to get and the Guild of Fine Food agree with us. We have won a 2 star award in every year we have entered, 2017 and 2019, which puts us in a very select group of food producers. I suspect the chefs there made a critical error in the cooking which is why the 3 star award did not arrive. Here is some of the comments the judges had about our geese.

A good looking bird with a crisp skin and a gorgeous layer of fat underneath which invites us in to taste…the aroma is very good too. The texture of the breast is firm to the tooth – there’s a rich flavour but this is not overpowering – the leg meat is very tender and melting in the mouth. The fat and skin both offer delicious rich notes and a long, long, lingering savoury character which is very moreish.
A youthful example nicely formed. The flavours of breast, leg, fat and skin were impressively deep. We all lauded the skin and fat – rich, clean – really sweet and delightful. Sound juices too. A terrific choice as a festive bird – plenty of flavour and delightful tenderness in a compact size.
